I'm a W/Mo and let's say I wanna change my secondary profession into an elementalist. Can I change back to monk after ?

I am pretty sure you can though i havent tried it yet. I switched from Mesmer to Elementalist. I finished the Mesmer quest to and the NPCs offer me to switch back to Mesmer if when I talk to them. I dont wanna try it out since I am pretty happy about being secondary Elem

but i am sure it works if they offer it

Yes you can. You'll just have to run the monk quest to change back. But the first step is always: Use the forum search! It's there for a reason.
